Ingredients
  

Cake Batter
  • 2 large eggs room temperature
  • 100 g granulated sugar
  • 100 g all-purpose flour sifted
  • 1 tsp baking powder
  • 1 tbsp butter melted
  • 1 tsp vanilla extract
Topping
  • 200 ml heavy cream whipped
  • 50 g fresh berries for garnish

Method
 

Prepare the Batter
  1. Preheat the oven to 180°C (350°F). Grease and flour a mini baking pan.
  2. In a mixing bowl, beat the eggs and sugar together until pale and fluffy.
  3. Gently fold in the sifted flour and baking powder, followed by the melted butter and vanilla extract.
Bake the Cake
  1. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  2. Bake in the preheated oven for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Assemble and Serve
  1. Once cooled, slice the mini sponge cake and top with whipped cream and fresh berries.
  2. Serve immediately and enjoy!

Notes
