Ingredients
  

  • 1 fresh pineapple sliced into rings
  • 12 maraschino cherries
  • 6 tablespoons unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a saucepan over medium heat, melt 2 tablespoons of butter with 2 tablespoons of brown sugar until bubbly.
  3. Pour the caramel mixture into each muffin tin cup, place a pineapple ring on top, and tuck in a cherry.
  4. In a mixing bowl, cream together the remaining butter and granulated sugar until fluffy. Add eggs one at a time.
  5. In another bowl, whisk together flour and baking powder; mix into wet ingredients with vanilla until smooth.
  6. Spoon batter over each pineapple ring until three-quarters full. Bake for about 20 minutes or until golden brown.
  7. Let cool for five minutes before flipping onto plates.
