Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 cup warm water about 110°F
  • 1 packet active dry yeast
  • 1 teaspoon sugar to activate yeast
  • 1 teaspoon salt
  • 1/4 cup olive oil plus extra for drizzling
Toppings
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon sea salt for sprinkling
  • 1 tablespoon cherry tomatoes halved

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
Shape and Bake
  1. Preheat the oven to 400°F (200°C).
  2. Once risen, punch down the dough and divide it into 8 equal pieces.
  3. Shape each piece into a small round and place on a greased baking sheet.
  4. Dimple each focaccia with your fingers, drizzle with olive oil, and sprinkle with rosemary, sea salt, and cherry tomatoes.
  5. Bake for 15-20 minutes or until golden brown.
  6. Remove from oven and let cool slightly before serving.
