Ingredients
  

  • 1/2 cup unsalted butter room temperature
  • 1/3 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 can 14 oz sweetened condensed milk
  • 1/2 cup granulated sugar for caramel
  • 1/4 cup unsalted butter for caramel
  • 1 cup milk chocolate chips
  • 1 cup Mini Eggs chopped

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan.
  2. Cream together the butter and sugar until fluffy. Gradually mix in flour to form a soft dough.
  3. Press the dough into the prepared pan. Bake for 20-25 minutes until golden brown. Cool completely.
  4. In a saucepan over medium heat, combine sweetened condensed milk, additional butter, and sugar until thickened (5-7 minutes) to make the caramel.
  5. Pour caramel over the cooled shortbread base and let set for about an hour.
  6. Melt chocolate in the microwave until smooth. Pour over the caramel layer and top with chopped Mini Eggs before it sets.
