Method
Prepare the Crust
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Line serving cups with cupcake liners and press the crust mixture into the bottom of each cup.
Make the Cheesecake Filling
- In a large bowl, beat the softened cream cheese until smooth using an electric mixer.
- Add sour cream, powdered sugar, and vanilla extract. Mix until combined.
- Gently fold in the whipped heavy cream until fully incorporated.
Assemble the Cheesecake Cups
- Spoon the cheesecake filling into each cup over the crust.
- Chill in the refrigerator for at least 30 minutes to set.
Add Toppings
- Before serving, toss sliced strawberries with granulated sugar and let sit for 10 minutes.
- Top each cheesecake cup with strawberries and blueberries.
