Mini 4th of July Cheesecake Cups

Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/4 cup sour cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream whipped
Toppings
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1 tbsp granulated sugar for strawberries

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Line serving cups with cupcake liners and press the crust mixture into the bottom of each cup.
Make the Cheesecake Filling
  1. In a large bowl, beat the softened cream cheese until smooth using an electric mixer.
  2. Add sour cream, powdered sugar, and vanilla extract. Mix until combined.
  3. Gently fold in the whipped heavy cream until fully incorporated.
Assemble the Cheesecake Cups
  1. Spoon the cheesecake filling into each cup over the crust.
  2. Chill in the refrigerator for at least 30 minutes to set.
Add Toppings
  1. Before serving, toss sliced strawberries with granulated sugar and let sit for 10 minutes.
  2. Top each cheesecake cup with strawberries and blueberries.
