Ingredients
  

For the Chicken
  • 1 lb chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Corn
  • 2 cups corn kernels fresh or frozen
  • 1 tbsp butter
  • 1 tsp lime juice
  • 1/4 cup cotija cheese crumbled
  • 1 tbsp cilantro chopped
  • 1/4 tsp paprika
For Serving
  • 2 cups cooked rice white or brown
  • 1 avocado sliced
  • 1/4 cup sour cream
  • 1 lime wedges

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add chicken breasts and coat well. Marinate for at least 15 minutes.
  2. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest before slicing.
Prepare the Corn
  1. In a skillet over medium heat, melt butter. Add corn kernels and cook for about 5-7 minutes until slightly charred.
  2. Stir in lime juice, cotija cheese, cilantro, and paprika. Mix well and remove from heat.
Assemble the Bowl
  1. In serving bowls, layer cooked rice, sliced grilled chicken, and the corn mixture.
  2. Top with sliced avocado, a dollop of sour cream, and lime wedges.
