Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
Mexican Street Corn Sauce
  • 1 cup corn kernels fresh or frozen
  • 1/2 cup mayonnaise for creaminess
  • 1/4 cup sour cream adds tang
  • 1 teaspoon lime juice freshly squeezed
  • 1/2 teaspoon chili powder for spice
  • 1/4 teaspoon cumin adds depth
  • 1/4 cup cotija cheese crumbled
  • 2 tablespoons cilantro chopped, for garnish
Toppings
  • 1 avocado sliced for garnish
  • 1 lime cut into wedges for serving

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt, pepper, and a sprinkle of chili powder.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
Make the Sauce
  1. In a mixing bowl, combine corn, mayonnaise, sour cream, lime juice, chili powder, cumin, and cotija cheese.
  2. Mix well until all ingredients are combined.
Assemble the Dish
  1. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  2. Top each chicken breast with the Mexican street corn sauce.
  3. Garnish with cilantro, avocado slices, and lime wedges before serving.
