Ingredients
  

  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 1 cup tomato sauce low-sodium if preferred
  • 2 cups chicken or vegetable broth
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Fresh cilantro for garnish optional

Method
 

  1. Heat vegetable oil in a medium saucepan over medium heat. Sauté chopped onions until translucent, about 5 minutes.
  2. Add minced garlic and sauté for an additional minute.
  3. Stir in rinsed rice, toasting for about 2 minutes until slightly golden.
  4. Mix in tomato sauce and broth along with cumin and chili powder.
  5. Bring to a gentle boil, then cover and reduce heat to low. Simmer for 20 minutes or until liquid is absorbed.
  6. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork. Garnish with cilantro if desired.
