Ingredients
  

Corn Mixture
  • 2 cups sweet corn fresh or canned
  • 1/4 cup mayonnaise preferably Mexican crema
  • 1/4 cup cotija cheese crumbled
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder adjust to taste
  • 1/4 teaspoon salt to taste
  • 1 tablespoon cilantro chopped, for garnish

Method
 

Prepare the Corn
  1. In a mixing bowl, combine the sweet corn, mayonnaise, cotija cheese, lime juice, chili powder, and salt.
  2. Mix well until all ingredients are evenly coated.
Serve
  1. Spoon the corn mixture into cups.
  2. Garnish with chopped cilantro and additional cotija cheese if desired.
