Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • ¼ cup fresh lime juice about 2 limes
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper

Method
 

  1. Pat dry the chicken breasts with paper towels.
  2. In a bowl, whisk together lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper until well blended.
  3. Place chicken in a resealable bag or dish and pour marinade over it. Seal and refrigerate for at least 1 hour or overnight for best flavor.
  4. Preheat grill or oven to medium-high heat (400°F). Remove chicken from marinade and discard any leftover marinade.
  5. Grill each breast for about 6-7 minutes per side until fully cooked (internal temperature of 165°F). If baking, cook until done.
  6. Serve garnished with fresh cilantro or lime wedges.
