Ingredients
  

Casserole Base
  • 2 cups cooked shredded chicken can use rotisserie chicken
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa your choice of heat
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Topping
  • 1 cup tortilla chips crushed
  • 1/2 cup sour cream for serving
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, onion powder, salt, and black pepper.
  3. Mix well until all ingredients are evenly coated.
  4. Transfer the mixture to a greased casserole dish and spread evenly.
  5. Top with cheddar and Monterey Jack cheese.
Bake the Casserole
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let cool for a few minutes.
  3. Sprinkle crushed tortilla chips on top before serving.
  4. Serve with sour cream and garnish with fresh cilantro.
