Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup diced fresh bell peppers red, yellow, or green
  • 1 medium yellow onion diced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup tomato sauce
  • 2 tbsp freshly squeezed lime juice
  • Salt and pepper to taste

Method
 

  1. Prepare your ingredients by chopping the bell peppers and onion into bite-sized pieces.
  2. Season the chicken with salt, pepper, cumin, and chili powder. In a large skillet over medium heat, drizzle olive oil and add the seasoned chicken breasts.
  3. Sear the chicken until golden brown on both sides (about 5 minutes each). Remove from skillet and set aside.
  4. In the same skillet, sauté onions and bell peppers until soft (about 3 minutes).
  5. Return the chicken to the skillet; add rinsed rice, chicken broth, tomato sauce, and lime juice.
  6. Bring to a gentle boil; reduce heat to low and cover for about 20 minutes or until rice absorbs liquid.
