  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 1/2 medium red onion finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method
 

  1. Cook the chicken: Preheat the grill to medium heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes on each side until fully cooked. Let rest before slicing.
  2. Boil the pasta: In salted boiling water, cook pasta according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water.
  3. Chop the veggies: Dice cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  4. Make the dressing: Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  5. Combine everything: In a large bowl, mix sliced chicken, cooled pasta, veggies, and feta cheese. Pour dressing over and toss gently to combine.
  6. Serve: Enjoy immediately or chill in the fridge for later.
