Ingredients
  

  • 3 boneless skinless chicken breasts (1.5 lbs)
  • 2 limes juiced
  • 4 garlic cloves minced
  • 2 tbsp olive oil
  • 2 bell peppers sliced, any color
  • 2 cups cooked rice or quinoa
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce

Method
 

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together lime juice, garlic, olive oil, honey, and soy sauce to create the marinade.
  3. Place chicken in a resealable bag or dish; pour marinade over it. Marinate for at least 30 minutes.
  4. Arrange marinated chicken and sliced bell peppers in the baking dish. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  5. While the chicken bakes, cook rice or quinoa according to package instructions.
  6. Slice the chicken once cooked; layer over rice or quinoa with roasted bell peppers. Drizzle leftover marinade on top before serving.
