Ingredients
  

  • 2 pounds starchy potatoes Russet or Yukon Gold
  • 4 tablespoons unsalted butter
  • ½ cup milk
  • 1 cup shredded sharp cheddar cheese
  • ½ cup bacon bits or turkey bacon
  • ½ cup chopped green onions

Method
 

  1. Peel and cube the potatoes evenly. Boil in salted water for 15-20 minutes until fork-tender. Drain and return to the pot.
  2. Mash the cooked potatoes with butter and milk until smooth. Stir in cheddar cheese, bacon bits, and green onions; season with salt and pepper.
  3. Preheat oven to 375°F (190°C) and grease a muffin tin.
  4. Spoon the potato mixture into each muffin cup, packing it down slightly. Top with additional cheese if desired.
  5. Bake for 25-30 minutes until golden brown on top. Let cool slightly before removing from the tin.
