Ingredients
  

Base Ingredients
  • 1 tbsp oil from the sun-dried tomato jar
  • 2 shallots diced
  • 2 cloves garlic
  • 5-6 sun-dried tomatoes finely diced
  • 2 tbsp tomato paste
Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp smoked paprika
  • 2 tsp oregano
  • 1 tsp cayenne chili pepper
  • Salt & pepper to taste
Liquids and Cheese
  • 300 ml vegetable stock
  • 150 ml heavy cream
  • 30 g hard cheese
Beans and Greens
  • 2 x 400 g tin butter beans drained
  • 1 handful fresh basil
  • 1 cup spinach chopped

Method
 

Cooking Steps
  1. Heat your oil in a pan, then add the diced shallots and sauté for 7-8 minutes.
  2. Add the garlic for another minute, followed by the sun-dried tomatoes and tomato paste.
  3. Stir the tomato into the onions and garlic, then add the seasonings.
  4. Stir everything together, then pour in the vegetable stock and the butter beans.
  5. Allow everything to simmer for a further 5-10 minutes on low heat until the sauce has thickened.
  6. Add your chopped spinach and stir it into the sauce until wilted.
  7. Finally, swirl in the cream, grate in the cheese, season to taste, and scatter over the shredded basil.
  8. Serve with crusty bread to mop up the sauce!

Notes

For a dairy-free version, substitute heavy cream with coconut milk. Feel free to swap butter beans for chickpeas or add a splash of lemon juice for brightness.
