Ingredients
  

  • 1 cup ripe mangoes diced
  • 1/2 cup sago pearls
  • 1 cup full-fat coconut milk
  • 2 tablespoons granulated sugar adjust to taste
  • 4 cups water for cooking sago

Method
 

  1. Rinse the sago pearls under cold water. In a pot, bring 4 cups of water to a boil and add the sago. Cook for 15-20 minutes until translucent. Drain and rinse under cold water.
  2. Blend the diced mangoes until smooth to create a puree.
  3. In a bowl, mix coconut milk with sugar until well combined.
  4. In a large bowl, combine the cooked sago, mango puree, and coconut milk mixture. Stir until evenly mixed.
  5. Chill in the refrigerator for at least one hour before serving. Serve with extra diced mango on top.
