Ingredients
  

Croissant Sandwiches
  • 4 pieces croissants preferably large and flaky
  • 8 large eggs beaten
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup cooked bacon or sausage crumbled or sliced
  • 1 tablespoon milk optional, for fluffier eggs
  • to taste salt
  • to taste pepper

Method
 

Prepare the Egg Mixture
  1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Cook the Eggs
  1. Heat a skillet over medium heat and pour in the egg mixture. Cook, stirring gently, until the eggs are scrambled and just set.
Assemble the Sandwiches
  1. Slice the croissants in half and layer the bottom half with scrambled eggs, cheese, and your choice of bacon or sausage.
  2. Top with the other half of the croissant.
Bake (Optional)
  1. If desired, place the assembled sandwiches in a preheated oven at 350°F (175°C) for 5-10 minutes to melt the cheese and warm the croissants.
Serve
  1. Serve immediately or wrap in foil and refrigerate for up to 2 days. Reheat in the oven or microwave before serving.
