Method
- Cook bacon by your preferred method, such as in the oven at 400°F for about 20 minutes until crispy.
- Remove bacon to a paper towel lined plate and keep the oven on.
- If using toppings, brush the tops of the croissants with oil or melted butter and sprinkle with toppings.
- Divide half of the cheese among the bottom halves of the croissants and bake tops and bottoms until the tops are crispy and cheese is melted.
- Whisk eggs with heavy cream, salt, and pepper. Cook in a buttered nonstick pan over low heat until soft, creamy curds form.
- Place two strips of bacon and mounds of eggs onto each bottom half and add the remaining cheese on top.
- If eating immediately, add fresh greens, tomatoes, or avocado as desired, then place the tops on and enjoy.

Notes
These sandwiches can be stored in the refrigerator for up to three days when wrapped tightly. Reheat in the oven at 350°F for about 10 minutes to bring back the fresh, flaky goodness.
