Ingredients
  

Cake Batter
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 cup fresh raspberries can substitute with frozen
Lemon Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, cream together the sugar and softened butter until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until just combined.
  6. Fold in the lemon zest, lemon juice, and raspberries gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
Make the Glaze
  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  2. Once the cake has cooled, drizzle the glaze over the top.
