Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Sauce
  • 1/4 cup olive oil extra virgin
  • 1 cup fresh lemon juice about 4 lemons
  • 1 tsp lemon zest freshly grated
  • 2 cloves garlic minced
  • 1/2 tsp red pepper flakes optional
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Garnish
  • 1/4 cup fresh parsley chopped
  • 1/2 cup parmesan cheese grated

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Stir in lemon juice, lemon zest, red pepper flakes, salt, and black pepper. Cook for another minute.
Combine and Serve
  1. Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
  2. Serve immediately, garnished with chopped parsley and grated parmesan cheese.

Notes

For a creamier sauce, you can add 1/2 cup of heavy cream to the sauce mixture.
