Ingredients
  

  • 8 oz spaghetti or linguine
  • 2 medium fresh lemons zest and juice
  • 4 tbsp extra virgin olive oil
  • 3 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley or basil chopped
  • Salt and pepper to taste

Method
 

  1. Cook the pasta in salted boiling water according to package instructions until al dente (about 8-10 minutes). Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet over medium heat, heat the olive oil and sauté minced garlic for about 1 minute until fragrant.
  3. Stir in lemon zest and juice, mixing well.
  4. Toss the drained pasta into the skillet with the lemon-garlic mixture. If too dry, gradually add reserved pasta water until desired consistency is reached.
  5. Mix in grated Parmesan cheese and chopped herbs until well combined.
  6. Serve immediately with an extra sprinkle of cheese if desired.
