Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • ½ cup unsalted butter softened
  • cup fresh lemon juice
  • Zest of 1 lemon
  • cup whole milk

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the softened butter and sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition; stir in lemon juice and zest.
  5. Gradually mix dry ingredients into the wet mixture alternating with milk until just combined.
  6. Pour the batter into the loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
