Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup lemon juice freshly squeezed
  • 1 tsp lemon zest
Blueberry Sauce
  • 1 cup fresh blueberries
  • 1/4 cup sugar
  • 1 tbsp lemon juice freshly squeezed
Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup butter melted
  • 2 tbsp sugar

Method
 

Prepare the Crust
  1. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  2. Divide the mixture evenly among the jars, pressing down to form a crust layer.
Make the Cheesecake Filling
  1. In a mixer, beat the softened cream cheese and sugar until smooth.
  2. Add vanilla extract, sour cream, lemon juice, and lemon zest, mixing until well combined.
Prepare the Blueberry Sauce
  1. In a small saucepan, combine fresh blueberries, sugar, and lemon juice.
  2. Cook over medium heat until the blueberries burst and the mixture thickens, about 5-7 minutes.
Assemble the Jars
  1. Layer the cheesecake filling over the crust in each jar.
  2. Top with the blueberry sauce, then refrigerate for at least 1 hour before serving.
