Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/4 cup honey or maple syrup for sweetness
  • 1 large egg room temperature
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest freshly grated
  • 1/4 cup coconut oil melted

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, baking soda, and salt.
  3. In another bowl, whisk together honey (or maple syrup), egg, lemon juice, lemon zest, and melted coconut oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
