Ingredients
  

Salad Ingredients
  • 2 cups grilled chicken, shredded
  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled optional
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • to taste salt
  • to taste pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and grilled chicken.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Top with crumbled feta cheese if desired.
  5. Serve immediately or refrigerate for up to 30 minutes before serving.
