Ingredients
  

For the Marinade
  • 1 cup peach preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon jalapeño, minced remove seeds for less heat
  • 1 clove garlic, minced
  • 1 teaspoon lime juice
For the Skewers
  • 1.5 pounds chicken breast, cubed
  • 1 bell pepper, cut into chunks any color
  • 8 skewers wooden or metal if wooden, soak in water for 30 minutes

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine peach preserves, soy sauce, olive oil, minced jalapeño, garlic, and lime juice. Mix well.
Marinate the Chicken
  1. Add the cubed chicken to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Assemble the Skewers
  1. Thread the marinated chicken, bell pepper, and red onion onto the skewers, alternating between the ingredients.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove from the grill and let rest for a few minutes before serving. Enjoy with additional peach preserves if desired.
