Ingredients
  

Meat
  • 2 pounds beef chuck cut into 1-inch cubes
Vegetables
  • 4 medium carrots peeled and sliced
  • 3 medium potatoes peeled and diced
  • 1 large onion chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
Liquids
  • 1 bottle Guinness stout
  • 4 cups beef broth
  • 2 tablespoons tomato paste
Herbs and Spices
  • 2 teaspoons dried thyme
  • 1 teaspoon bay leaf
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Others
  • 2 tablespoons olive oil for browning the beef

Method
 

Prepare the Ingredients
  1. Chop all vegetables and set aside.
Brown the Beef
  1. In a Dutch oven, heat olive oil over medium-high heat. Add beef cubes and brown on all sides.
Add Vegetables
  1. Add onions, carrots, celery, and garlic to the pot. Cook for about 5 minutes until softened.
Add Liquids and Seasoning
  1. Stir in tomato paste, then pour in Guinness and beef broth. Add thyme, bay leaf, salt, and pepper.
Simmer the Stew
  1. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, until beef is tender.
Serve
  1. Remove bay leaf and serve hot with crusty bread.

Notes

For a thicker stew, you can add a slurry of cornstarch and water towards the end of cooking.
