Irish Cheddar and Cabbage Hash Brown Skillet

Ingredients
  

  • 4 cups shredded potatoes (fresh or frozen)
  • 2 tablespoons olive oil (for frying)
  • 2 cups shredded green cabbage
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup Irish cheddar cheese (shredded)
  • 1 teaspoon salt (to taste)
  • 1 teaspoon black pepper (to taste)
  • 1 teaspoon dried thyme

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add 4 cups of shredded potatoes, pressing them down to form a flat layer.
  3. Cook until golden brown, about 5-7 minutes.
  4. Flip the hash browns carefully and cook the other side until crispy and golden, which should take another 5-7 minutes.
  5. Remove the hash browns from the skillet and set aside.
  6. Add diced onion to the same skillet and cook until translucent, about 3-4 minutes.
  7. Stir in minced garlic and 2 cups of shredded cabbage, cooking until tender, around 5-7 minutes.
  8. Return the crispy hash browns to the skillet, mixing them with the cabbage mixture.
  9. Sprinkle with 1 cup of shredded Irish cheddar cheese and cover until melted, about 2-3 minutes.
  10. Season with salt, pepper, and thyme to taste.
  11. Serve hot.
