Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1/4 teaspoon salt
Cheesecake Filling
  • 16 ounces cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream
Rhubarb Topping
  • 4 cups rhubarb chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, melted butter, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a greased 9x13 inch baking pan. Bake for 10-12 minutes until lightly golden.
Make the Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth. Add sugar and vanilla, mixing well.
  2. Add the eggs one at a time, mixing well after each addition. Stir in sour cream until combined.
  3. Pour the cheesecake filling over the baked crust and spread evenly.
Prepare the Rhubarb Topping
  1. In a saucepan, combine chopped rhubarb, sugar, cornstarch, and water. Cook over medium heat until rhubarb is tender and mixture thickens.
  2. Spread the rhubarb topping over the cheesecake filling.
Bake and Cool
  1. Bake the assembled cheesecake squares for 45-50 minutes until set. Let cool completely in the pan.
  2. Refrigerate for at least 4 hours before cutting into squares and serving.
