Ingredients

For the Chicken
  • 2 cups chicken breast, diced boneless and skinless
  • 2 tablespoons honey
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for cooking
For the Mac and Cheese
  • 8 ounces elbow macaroni
  • 2 cups cheddar cheese, shredded sharp or mild
  • 1 cup milk whole or 2%
  • 1/2 cup cream cheese softened
  • 1/4 cup parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt

Method

Prepare the Chicken
  1. In a skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 7-10 minutes.
  2. Stir in honey and black pepper, cooking for an additional 2 minutes until the chicken is coated. Remove from heat and set aside.
Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
  1. In the same pot, reduce heat to low and add milk, cream cheese, cheddar cheese, parmesan cheese, garlic powder, onion powder, and salt. Stir until the cheeses are melted and the sauce is smooth.
Combine and Bake
  1. Add the cooked macaroni and honey pepper chicken to the cheese sauce, stirring to combine. Transfer to a baking dish.
  2. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until bubbly and golden on top.
