Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1/2 cup honey
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Ingredients
  • 1/2 cup chocolate chips optional
  • 1/2 cup nuts chopped, optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, flour, baking soda, salt, and cinnamon.
  3. In another bowl, beat together the honey, softened butter, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. If desired, fold in chocolate chips and/or nuts.
Baking
  1. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are golden.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
