Ingredients
  

  • 1 cup Arborio rice
  • 4 cups low-sodium chicken or vegetable broth
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Fresh herbs e.g., parsley or basil for garnish
  • Salt and pepper to taste

Method
 

  1. In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook for an additional minute.
  2. Add 1 cup of Arborio rice to the pan and toast for about 2 minutes, stirring frequently.
  3. Gradually add warm broth one ladle at a time, stirring gently until each addition is absorbed before adding more.
  4. After about 20 minutes, when the rice is al dente, stir in 1/2 cup grated Parmesan cheese along with salt and pepper to taste. Incorporate any cooked vegetables or proteins if desired.
  5. Remove from heat and fold in an additional tablespoon of butter and fresh herbs before serving warm.
