Method
Cooking the Eggs
- Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove and set aside.
Stir-Frying the Vegetables
- In the same wok, add another tablespoon of vegetable oil. Add the peas and carrots, and stir-fry for 2-3 minutes until tender.
Combining Ingredients
- Add the cooked rice to the wok, breaking up any clumps. Stir-fry for 3-4 minutes until heated through.
- Add the cooked chicken or shrimp, scrambled eggs, green onions, soy sauce, and sesame oil. Stir well to combine and heat through for another 2-3 minutes.
Serving
- Serve hot, garnished with additional green onions if desired.

Notes
For best results, use day-old rice as it is drier and fries better than freshly cooked rice.
