Hibachi Fried Rice

A delicious and savory Japanese-style fried rice, typically made with vegetables, eggs, and a choice of protein, seasoned with soy sauce and sesame oil.

Ingredients
  

Rice
  • 3 cups cooked white rice preferably day-old
Vegetables
  • 1 cup peas and carrots frozen or fresh
  • 1 cup green onions sliced
Protein
  • 2 eggs large beaten
  • 1 cup chicken or shrimp cooked and diced
Sauces and Oils
  • 3 tablespoons soy sauce or to taste
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil

Method
 

Cooking the Eggs
  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove and set aside.
Stir-Frying the Vegetables
  1. In the same wok, add another tablespoon of vegetable oil. Add the peas and carrots, and stir-fry for 2-3 minutes until tender.
Combining Ingredients
  1. Add the cooked rice to the wok, breaking up any clumps. Stir-fry for 3-4 minutes until heated through.
  2. Add the cooked chicken or shrimp, scrambled eggs, green onions, soy sauce, and sesame oil. Stir well to combine and heat through for another 2-3 minutes.
Serving
  1. Serve hot, garnished with additional green onions if desired.

Notes

For best results, use day-old rice as it is drier and fries better than freshly cooked rice.
