Ingredients
  

  • 2 tbsp olive oil
  • 1 medium yellow onion diced
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1 medium zucchini diced
  • 4 cups fresh spinach
  • 1 can 14.5 oz diced tomatoes in juice
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add zucchini, diced tomatoes (with juice), and vegetable broth; stir well and bring to a gentle simmer.
  4. Season with oregano, basil, salt, and pepper; let simmer for about 20 minutes.
  5. Just before serving, stir in fresh spinach until wilted.
  6. Serve hot with crusty bread or sprinkle grated parmesan on top if desired.
