Ingredients
  

  • 1 lb lean ground beef 80/20
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 cup bell peppers diced
  • 1 cup onion diced
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Method
 

  1. Prepare ingredients by chopping bell peppers and onions.
  2. In a skillet over medium heat, cook the ground beef until browned (5-7 minutes). Drain excess fat.
  3. Add diced bell peppers and onions to the skillet; stir in cumin and chili powder. Sauté until veggies soften (4-5 minutes).
  4. Layer the meat mixture and cheese on half of each tortilla; fold over.
  5. Cook each quesadilla in a skillet over medium heat until golden brown (3-4 minutes per side).
  6. Slice into wedges, serve warm with salsa or guacamole.
