Grilled Shrimp Bowl with Avocado and Corn Salsa

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lime juice
  • 1 ripe avocado, diced
  • 2 ears fresh corn on the cob
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro leaves, chopped
  • Salt, to taste
  • Pepper, to taste

Method
 

  1. Combine shrimp, olive oil, lime juice, salt, and pepper in a bowl and marinate for 15-20 minutes.
  2. Grill or boil corn until tender, then cool slightly and cut kernels off the cob into a mixing bowl.
  3. Mix in diced avocado, finely chopped red onion, and cilantro into the bowl with corn.
  4. Squeeze in lime juice and season with salt.
  5. Preheat your grill to medium-high heat.
  6. Thread marinated shrimp onto skewers and grill until opaque and slightly charred, about 2-3 minutes per side.
  7. In serving bowls, layer grilled shrimp over rice or greens.
  8. Top generously with avocado-corn salsa for that colorful flair.
