Ingredients

  • 1.5 lbs flank steak
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 1/4 cup low-sodium soy sauce
  • Juice of 1 lemon

Method

  1. Marinate the Flank Steak: In a large bowl, whisk together olive oil, soy sauce, minced garlic, lemon juice, rosemary, and thyme. Place flank steak in a resealable bag and pour in the marinade. Seal tightly and refrigerate for at least one hour (or overnight for maximum flavor).
  2. Prepare Your Grill: Preheat grill to medium-high heat (about 400°F/200°C).
  3. Grill the Steak: Remove steak from marinade (discard leftover marinade) and place on the grill. Cook for about 4-5 minutes per side for medium-rare.
  4. Let It Rest: Transfer the steak to a cutting board and cover loosely with foil for five minutes.
  5. Slice Against the Grain: Using a sharp knife, slice the flank steak into thin strips against the grain.
  6. Serve with Style: Plate your sliced flank steak with roasted vegetables or a fresh salad, drizzling with pan juices if desired.
