Ingredients
  

Salad Base
  • 4 ears corn husked
  • 2 medium ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Grill the Corn
  1. Preheat the grill to medium-high heat. Place the husked corn directly on the grill and cook for about 10 minutes, turning occasionally, until charred and tender.
Prepare the Salad
  1. Once the corn is grilled, let it cool slightly, then cut the kernels off the cob.
  2. In a large mixing bowl, combine the grilled corn, diced avocados, cherry tomatoes, red onion, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad and gently toss to combine. Serve immediately.
