Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Taco Assembly
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño sliced optional for heat

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side or until fully cooked. Let rest for 5 minutes.
Prepare Tacos
  1. Slice the grilled chicken into strips. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Assemble the tacos by placing chicken strips on tortillas and topping with lettuce, tomatoes, sour cream, cheese, cilantro, and jalapeño slices.
