Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Green Goddess Dressing
  • 1 medium avocado ripe
  • 1/4 cup Greek yogurt or sour cream
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh chives chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Garnish
  • 2 tablespoons fresh chives chopped
  • 1 tablespoon capers optional

Method
 

Prepare the Eggs
  1. Place eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. Transfer eggs to an ice bath to cool for 5 minutes, then peel and slice in half lengthwise.
Make the Filling
  1. In a mixing bowl, scoop out the yolks and mash them with the avocado, Greek yogurt, parsley, chives, lemon juice, garlic, salt, and pepper until smooth.
  2. Transfer the mixture to a piping bag and fill the egg whites with the green goddess mixture.
Garnish and Serve
  1. Sprinkle with additional chives and capers if using. Serve immediately or refrigerate until ready to serve.

Notes

These deviled eggs can be made a few hours in advance. Store in the refrigerator until serving.
