Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup black olives sliced
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • salt to taste salt
  • pepper to taste black pepper

Method
 

Prepare Quinoa
  1. In a medium pot, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
Mix Salad
  1. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, black olives, and parsley.
Make Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic, salt, and pepper.
Combine
  1. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
