Ingredients
  

Chicken Marinade
  • 1 lb chicken breast boneless, skinless
  • 2 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 2 teaspoons oregano dried
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Bowl Ingredients
  • 2 cups cooked quinoa
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/2 cup kalamata olives pitted and sliced
Tzatziki Sauce
  • 1 cup Greek yogurt plain
  • 1 small cucumber grated
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon dill fresh or dried
  • 1/2 teaspoon salt

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
Prepare the Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt until well combined. Refrigerate until ready to serve.
Assemble the Bowls
  1. Slice the grilled chicken into strips. In each bowl, layer cooked quinoa, diced cucumber, cherry tomatoes, red onion, feta cheese, and kalamata olives.
  2. Top with sliced grilled chicken and a generous dollop of tzatziki sauce.
