Ingredients
  

Meat
  • 5-6 pounds Bone-in Prime Rib Roast Choose a well-marbled cut for extra juiciness and flavor.
Herbs and Seasonings
  • 2 sprigs Fresh Rosemary Use fresh sprigs to enhance the roast.
  • 4 cloves Garlic Cloves Crush them for maximum flavor.
  • 1/4 cup Olive Oil Drizzle generously over the meat.
  • to taste Salt Season liberally.
  • to taste Pepper Season liberally.
Vegetables
  • 4 medium Potatoes Yukon Gold or Russet, chopped.
  • 2 medium Carrots Chopped into even pieces.
  • 2 medium Parsnips Chopped into even pieces.
Gravy
  • 2 cups Beef Stock Use high-quality stock for gravy.

Method
 

Preparation
  1. Preheat your oven to 450°F (230°C).
  2. Pat the roast dry with paper towels and rub generously with olive oil, salt, pepper, and crushed garlic.
  3. Insert rosemary sprigs between slits in the meat.
  4. Chop potatoes, carrots, and parsnips into even-sized pieces and toss with olive oil, salt, and pepper.
Cooking
  1. Place the roast and vegetables in the preheated oven and roast for 20 minutes at 450°F (230°C).
  2. Lower the temperature to 325°F (160°C) and continue cooking until desired doneness.
Gravy Preparation
  1. Once done, remove the roast from the oven and let it rest.
  2. Pour drippings into a pan, whisk in flour and beef stock over medium heat until thickened into gravy.
