Ingredients
  

Cake
  • 1 cup gluten-free all-purpose flour ensure it contains xanthan gum
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter softened
  • 1 large egg
  • 1/2 cup milk or dairy-free alternative
  • 1 tsp vanilla extract
Cinnamon Streusel Topping
  • 1/4 cup gluten-free all-purpose flour
  • 1/4 cup brown sugar packed
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter melted

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the sugar and softened butter until light and fluffy.
  4. Add the egg, milk, and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Make the Streusel Topping
  1. In a small bowl, combine the gluten-free flour, brown sugar, and cinnamon.
  2. Stir in the melted butter until the mixture resembles coarse crumbs.
Bake the Coffeecake
  1. Pour the batter into the prepared cake pan and spread evenly.
  2. Sprinkle the streusel topping evenly over the batter.
  3. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  4. Allow to cool slightly before serving.
