Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons poppy seeds
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • Zest of 1 lemon
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon baking powder
  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking pan or line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, poppy seeds, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy (about 3 minutes).
  4. Beat in eggs one at a time, then stir in lemon juice and zest until combined.
  5. Gradually mix dry ingredients into the wet mixture until just combined; do not overmix.
  6. Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow to cool before glazing by mixing powdered sugar and lemon juice until smooth; pour over cooled bars.
