  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 cup unsulfured molasses
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter softened

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, ginger, cinnamon, and sugar until well combined.
  3. In another bowl, mix melted butter and molasses until smooth; add eggs one at a time, whisking well after each.
  4. Gradually combine the wet mixture into the dry ingredients, stirring gently to avoid overmixing.
  5. Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack; serve plain or frost if desired.
