- Wash and peel the potatoes, cut into quarters, and boil in salted water until fork-tender (15-20 minutes).
- While potatoes cook, cut steak into bite-sized pieces and season with salt and pepper.
- In a skillet over medium-high heat, melt 2 tbsp butter, then add steak in batches. Sear until browned on all sides (about 3 minutes per side).
- Reduce heat, add minced garlic and remaining butter, tossing to coat; cook for another minute.
- Once potatoes are tender, drain, return to pot, smash gently with cheese, salt, and pepper.
- Serve steak bites over cheesy smashed potatoes drizzled with garlic butter sauce.
