Ingredients
  

Galette Batter
  • 1 cup all-purpose flour
  • 1 cup water adjust for consistency
  • 1 pinch salt
  • 1 tablespoon olive oil
Filling
  • 1 can tuna drained
  • 1 cup cottage cheese
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon lemon juice
  • 1 pinch black pepper

Method
 

Prepare the Batter
  1. In a mixing bowl, combine flour, water, salt, and olive oil. Mix until smooth and let rest for 10 minutes.
Make the Filling
  1. In another bowl, mix together the drained tuna, cottage cheese, parsley, lemon juice, and black pepper until well combined.
Cook the Galettes
  1. Heat a non-stick skillet over medium heat. Pour a ladle of batter into the skillet, spreading it out to form a thin circle.
  2. Cook for about 2-3 minutes until the edges lift, then flip and cook for another 2 minutes.
  3. Remove from skillet and repeat with remaining batter.
Assemble the Galettes
  1. Place a spoonful of the filling on one half of each galette, fold over, and serve warm.
