Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Filling
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese softened
Topping
  • 1 cup mixed fresh fruits such as strawberries, blueberries, kiwi, and raspberries
  • 1 tablespoon apricot jam for glaze

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Stir in the egg yolk and ice water until the dough comes together. Press the dough into a tart pan and prick the bottom with a fork.
  3. Bake for 20-25 minutes or until golden brown. Let it cool completely.
Prepare the Filling
  1. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  2. In another bowl, beat the softened cream cheese until smooth. Fold the whipped cream into the cream cheese until well combined.
Assemble the Tart
  1. Spread the cream filling evenly over the cooled crust.
  2. Arrange the mixed fresh fruits on top of the filling.
  3. Heat the apricot jam until melted and brush it over the fruits for a shiny glaze.
